Cornish Heavy Cake (hevva Cake)
  1. Preheat fan oven to 180 degrees C

  2. Put the flour, lard and sugar in a mixing bowl and rub in the fat until there are no large lumps

  3. Mix in the currants, then the milk and stir until you can combine the mixture into a dough

  4. Line baking tray approximately 30cm by 20cm and press in the dough

  5. Brush a little milk over the top and lightly mark out vertical and horizontal lines to mark cake squares

  6. Bake for 40 minutes, turning after 20 minutes to ensure an even bake

  7. Dust with sugar and leave to cool
