Preheat the oven to 130 °C and sterilize the jars by placing them in the oven for about 15 minutes after washing.
In a large pot, combine the dried fruits: raisins, sultanas, currants, slivered almonds, chopped candied peel, and mixed peel.
Add three teaspoons of mixed spice, 250 g of soft dark brown sugar, and beef suet (or a suitable substitute) to the pot.
Grate the bromley apples and incorporate them into the mixture along with the zest and juice of a lemon.
Stir everything together using a wooden spoon.
Gently heat the mixture until the suet melts and the flavors blend together.
Transfer the mincemeat into the sterilized jars.
Allow the jars to cool, then refrigerate for at least a week to let the flavors marinate.
After a week, add a few spoons of brandy to each jar, stir well, and store.
