Marinate 1 lb thinly sliced pork with 2 tbsp gochujang, 2 tbsp gochugaru, 2 tbsp soy sauce, 2 tbsp minced garlic, ½ tsp grated ginger, ½ tbsp Korean rice syrup, and black pepper.
Layer ½ sliced onion, then 1 lb soybean sprouts, and 3 green onions around the edges in a pot. Add marinated pork on top.
Cook uncovered on low-medium heat until sprouts release water, steam, and collapse. Do not mix during this step.
Once sprouts have collapsed, increase heat to medium, mix everything together, and cook until pork is fully cooked.
