Remove steak from fridge and let sit for 30 minutes
Heavily salt and pepper on all sides
Heat your skillet on medium high heat, wait 2 minutes, and then add in your olive oil
Sear for 4 minutes on each side
Cut heat
Drain out some excess oil and then add in your butter (i ended up using 2 tablespoons)
Add in your rosemary and thyme
Add in your garli, bring heat to low again
Baste steak for 2 minutes in butter and herbs
Take internal temp (130-135 for med rare, 140-145 for medium)
Remember that it will continue to cook a little bit, so for medium i take it off at 135
Remove from pan, pour the butter and herbs on top of steak
Let it rest for 10 minutes before slicing
