Instant Pot Beef Bourguignon
  1. Render Bacon in Instant Pot: Layer 6 slices of thick-cut bacon in Instant Pot. Heat up Instant Pot using 'Sauté More' function. Flip bacon slices occasionally until done. Place rendered bacon on a paper towel to absorb excess fat.

  2. Brown Chuck Roast Steak: Pat dry chuck roast, season with salt and pepper, and brown in Instant Pot for 5 to 8 minutes on each side. Set aside.

  3. Sauté Mushrooms & Cut Meat: Add olive oil or unsalted butter, then sauté sliced cremini mushrooms until slightly crisp and browned. Chop bacon and cut chuck roast into 1.5" thick cubes.

  4. Sauté Onions: Brown pearl onions, then add sliced onions and sauté. Add minced garlic, tomato paste, thyme, and bay leaves, then sauté for 1 minute.

  5. Deglaze Instant Pot: Pour red wine into Instant Pot and deglaze the bottom.

  6. Pressure Cook Vegetables: Add soy sauce, fish sauce, stock, carrot chunks, and bacon bits. Pressure cook at high pressure for 4 minutes, then quick release.

  7. Pressure Cook Beef Bourguignon: Place cubed beef in Instant Pot, ensuring it's submerged. For optional mashed potatoes, layer halved russet potatoes on top. Pressure cook at high pressure for 30 minutes, then natural release for 10 minutes.

  8. Thicken Beef Bourguignon and Add Vegetables: Discard bay leaves, bring gravy to a simmer, and mix flour with cold water. Add to gravy until desired thickness. Add back beef and vegetables.

  9. Optional - Make Mashed Potatoes: Mash cooked potatoes with milk and butter, season to taste.

  10. Serve: Garnish with Italian parsley and thyme. Enjoy!
