Pulse the dates in a food processor then add the coconut oil, peanut butter, cacao powder and whizz until smooth and well combined
Press the brownie mixture into each cube of an ice cube tray, filling them around ¾ full
Chill in the fridge for at least 30 minutes
In a bowl over a saucepan with 2 inches of water on a low heat, melt the dark chocolate chips and coconut oil, stirring occasionally until smooth. Alternatively, melt the chocolate in a microwave-safe bowl in 10-second increments, stirring between each interval until smooth
Top the brownie bites with chocolate, then chill again to set
Serve from the fridge and enjoy
