Chipotle Chicken Chili With Cheddar Chive Biscuit Topping
  1. Preheat oven to 400F

  2. In a large pot, add oil and saute onions and peppers until softened, about 10 minutes

  3. Add garlic, spices and tomato paste and cook, stirring constantly, for another minute

  4. Add all remaining chili ingredients; stir, cover and let simmer for about 20 minutes

  5. Uncover and simmer for another 5 minutes (if it looks too thick, add more chicken broth)

  6. Taste and season with salt if needed

  7. Make your biscuit topping according to package directions, stirring in cheddar and chives

  8. Transfer chili to six individual bowls and let cool slightly

  9. Top with biscuit mix and brush with butter

  10. Bake until bubbly and biscuits are cooked through, about 15 minutes
