Summer Pasta Salad
  1. Cook orzo according to package directions. Drain and rinse with cold water.

  2. In a large bowl, combine cooked orzo, cherry tomatoes, cucumber, olives, feta cheese, and spinach.

  3. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.

  4. Pour dressing over pasta mixture and toss gently to combine.

  5. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
