Season and cook the chicken. Toss chicken with paprika, garlic powder, onion powder, chili powder, salt, and pepper. Heat olive oil in a large skillet over medium-high heat. Cook for 6–8 minutes, stirring occasionally, until deeply golden and cooked through to 165°F.
Make the sticky sauce. Lower the heat slightly. Add butter and garlic to the skillet and cook for 20–30 seconds. Stir in honey, hot sauce, soy sauce, and red pepper flakes. Let it bubble for 1–2 minutes until glossy and slightly thickened. Toss the chicken until every piece is coated.
Mix the jalapeño ranch. Stir together ranch, jalapeño, lime juice, and cilantro. Keep it slightly thick so the drizzle looks dramatic on camera.
Crisp the tacos. Add a little Monterey Jack cheese to one side of each tortilla, top with hot honey chicken, fold, and toast in a clean skillet for 1–2 minutes per side until golden and crispy.
Finish. Open each taco slightly and add shredded lettuce, tomatoes, and red onion. Drizzle generously with creamy jalapeño ranch and finish with cilantro and a squeeze of lime.
