4 pounds boneless smoked ham, sliced very thin

1 (12-oz) can Coca-Cola

1 12 ounce bottle grainy brown Dijon mustard

¼ cup brown sugar

3 tablespoons honey

2 teaspoons black pepper

1 teaspoon chili powder

Pinch of paprika (optional)

Notes

Slice the ham very thin using a deli slicer if you have one. If not, you can slice it carefully by hand or simply order 4 pounds of thin-sliced smoked ham off the bone from the deli.

Line a 9×12 casserole dish with foil and add the sliced ham, spreading it evenly.

In a bowl, whisk together: Coca-Cola, brown sugar, honey, grainy Dijon mustard, black pepper, chili powder, and paprika (if using). Mix well until fully combined.

Pour the sauce evenly over the ham. Cover the dish tightly with foil.

Place in a 325°F oven and bake for 30 to 40 minutes. The ham is already fully cooked, this step is just to warm it through and let the sauce soak in.

Remove the foil and return to the oven for about 25 minutes, or until the ham reaches your preferred level of caramelization.

Carefully drain the sauce into a bowl for serving, or transfer it to a saucepan and simmer to thicken even more if desired.

Choose a savory smoked ham.Avoid honey, maple, brown sugar, or already-glazed ham because the Coca-Cola sauce provides plenty of sweetness.

Have the deli slice it for you. Ask for fully cooked smoked ham off the bone sliced very thin. You do not need a meat slicer for this recipe.

Don't pack the ham into the pan.Keeping the slices loosely layered helps the sauce get between them.

The uncovered cooking time is flexible. Take the ham out when it reaches the level of caramelization you prefer.

Save the sauce. Serve some of the sauce from the bottom of the pan alongside the sandwiches. For a thicker sauce, transfer it to a saucepan and simmer gently until reduced.

Make ahead: The ham can be completely prepared ahead of time. Refrigerate it with some of the sauce and reheat it covered so the thin slices don't dry out.

Leftovers: Store leftover ham with some of its sauce in an airtight container in the refrigerator.

For a party: Keep the finished ham warm with some of the sauce in a slow cooker or appropriate warming dish.

Serving size: Four pounds of thinly sliced ham should make approximately 12 to 16 servings, depending on how much ham people pile onto their rolls and what else you're serving
