Preheat oven to 375°F. Line baking sheets with parchment paper and set aside.
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth. Beat in the eggs and vanilla extract until light and fluffy (about 1 minute).
In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
Gradually mix the dry ingredients into the wet ingredients until fully combined.
Fold in chocolate chips
Prepare the s'mores base. Lay out graham cracker squares on the prepared baking sheets. Place a piece of chocolate on each cracker. Top each with one regular-sized marshmallow.
Scoop 2–3 tablespoons of dough and roll into a ball. Flatten the dough in your hand and make a small well in the center.
Place the dough on top of the prepared graham/chocolate/marshmallow stack into the center and wrap the dough around it. It doesn’t need to be perfect—just sealed enough! (Tip: you can split the marshmallows in half to make wrapping the dough around it easier)
Bake for about 10-12 minutes, or until the cookies are just barely starting to brown.
Let cookies sit on the baking sheet for 5 minutes, then transfer to a wire rack to cool.
Optional finishing touch: While the cookies are still warm (but mostly cooled), press a piece of Hershey’s/Chocolate bar on top for decoration.
