Finely chop your shallot, mushroom, red chili pepper, and green onions.
In a bowl, add your ground pork, diced mushrooms, shallots, green onions, soy sauce, fish sauce, and salt and pepper to taste and mix well until evenly combined.
In a small bowl, mix lime juice, minced garlic brown sugar, red chili pepper, and fish sauce to make your spicy fish dipping sauce.
In a pan on medium heat coated with spray oil, cook your ground pork mix until cooked through. Set aside to cool to room temperature.
Wet your rice paper in a bowl of water evenly, shake off excess water, and place on a flat surface and scoop a few spoonfuls of your cooked pork onto the center of your rice paper.
Roll your rice paper into long logs/burritos, repeat with the remaining rice paper to make more rolls, and place the rolls on a plate.
Pour your sauce on top of your rice paper rolls, top off with fried shallots, red chili peppers, and cilantro and enjoy!
