In a large skillet over medium-high heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.
Add the sliced onion and minced garlic to the skillet. Sauté for 2-3 minutes until the onion is translucent.
Stir in the shredded cabbage and cook for an additional 5-7 minutes until the cabbage is wilted and tender.
Add soy sauce, sesame oil, grated ginger, salt, and pepper. Stir well to combine and cook for another 2 minutes.
Remove from heat and garnish with chopped green onions and sesame seeds if desired. Serve hot as a healthy stir fry stack.
