Whisk together eggs, sugar, honey, lemon zest, and vanilla until light and fluffy
Sift in flour and baking powder, fold gently until just combined
Add melted (or browned) butter, mix until smooth
Cover and rest in fridge overnight (or minimum 4 hours)
Butter and flour your madeleine pan generously
Fill molds ¾ full
Bake 12 minutes at 180°C (350°F) until edges are golden
Unmold immediately and let cool on a rack
