  2. Add sesame oil, soy sauce, oyster sauce, and white sugar to the chicken mixture

  3. Mix in the egg to bind the filling

  4. Mix cornflour with water to create a slurry

  5. Fill dumpling or gyoza wrappers with the chicken mixture, sealing edges with the cornflour slurry

  6. Heat oil in a pan and fry dumplings until crispy

  7. Add water to the pan and cover to steam the dumplings

  8. For the sauce, combine oyster sauce, sweet soy sauce, fish sauce, and chilli oil

  9. Serve crispy dumplings with the sauce
