Lay out large piece heavy duty foil. Lay strips of bacon, then cover with sausage meat, spread with cranberry sauce, form roll and encase roll in foil, twisting ends to tighten.
Preheat oven to 180°C and cook for 35 mins then remove foil and baking paper, bake for 10 minutes more or until the top is golden.
Pour over maple syrup and just another 5 mins, but watch it as it can catch.
Stand for 15 mins. Slice and serve as desired.
