Heat a pan over medium heat and add garlic, tomatoes, seasonings, vinegar, tomato paste, and sun dried tomatoes to the pan. Cook until the tomatoes are soft and then squish them.
Add the plant based cream and nutritional yeast and stir. Then simmer for a minute or two.
Season with salt and pepper to taste.
Add arugula and cooked noodles to the pan.
Cook until the arugula is wilted to taste
Top with fresh basil and parmesan
