Air Fryer Grilled Chicken With Mint Yogurt Sauce
  1. Mix all marinade ingredients and coat the scored chicken pieces thoroughly. Marinate covered for at least 6 hours or overnight.

  2. Add ⅓ cup water to the bottom of your airfryer basket. Place the greased tray over it.

  3. Arrange the marinated chicken on top and spray with oil. Airfry at 190°C for 9 minutes. Flip, then cook for another 8 minutes.

  4. Alternatively, if baking, place chicken on a greased rack over a tray and bake for 22-25 minutes at 200°C flipping halfway, then baste with butter sauce and broil at 220°C for 3-4 minutes until slightly charred.

  5. Mix melted light butter with garlic, peri-peri seasoning, honey, and a pinch of salt to prepare the butter sauce.

  6. Brush half the butter sauce onto the chicken. Airfry at 200°C for 2 minutes.

  7. Rest the chicken, then brush on the remaining butter sauce and any drippings.

  8. Blend all mint yogurt sauce ingredients (Greek yogurt, mint leaves, garlic clove, honey, and salt) into a creamy dip. Adjust salt to taste.
