Chickpea cookies
  1. Preheat oven to 170°C/350°F.

  2. Line a baking tray with baking paper.

  3. Mash or blend all of the ingredients (except for the dark chocolate) until fairly smooth.

  4. Spread the mixture onto the baking tray.

  5. Sprinkle the dark chocolate over the top and press it into the mixture.

  6. Bake for 15 minutes or until a golden brown.

  7. Allow to cool on a wire rack, then cut into 9 squares.

  8. Store in an airtight container at room temperature for up to 4 days.
