Into a blender, or using an immersion blender. Blend soy milk, salt, seasoning, dijon and apple cider vinegar until well mixed.
Turn the blender on medium heat lowly stream in the the oil - this will cause the oil to emulsify and thicken into creamy mayo! Store in a clean jar in the fridge and use on sandwiches, burgers, chips and more.
Feel free to add wasabi powder, sriracha, truffle oil for flavoured mayo!
