Fry minced garlic and spring onion until soft and browned
Add curry powder and fry for another few minutes
Add vegetable stock and lime juice, then simmer to thicken and reduce
Mix peanut butter, brown sugar and soy sauce together
Add the broth to the peanut butter mixture
Season mushrooms with garlic powder and oil, then roast in the oven
Halfway through roasting, add crushed peanuts to the mushrooms
Boil or steam the dumplings
Boil the noodles until almost cooked
Serve noodles with hot broth and dumplings
Top with garnishes: chilli oil, crushed roasted peanuts, chives, coriander, lime, sesame seeds and nori sheets
