Proof the yeast by mixing it with the sugar and warm water for 10 minutes until foamy.
In a bowl, mix 1 cup of the flour with the proofed yeast mixture.
Slowly incorporate the remaining 1 ½ cups of flour until the dough pulls away from the bowl and is stretchy.
Grease a bowl, place the dough in it, cover, and let rise until doubled in size.
Punch down the dough and roll into small balls, forming them into knots.
Place the knots on a greased baking pan and bake at 400°F for 13 minutes.
Melt the butter in the microwave, mix in the minced garlic, and pour the garlic butter over the baked knots.
Optionally, sprinkle with Parmesan cheese.
