Lemon loaf/ bread
Yield: 1 loaf
½ cup shortening ( I used butter)
1 cup sugar
2 eggs, well beaten
1½ cups flour
1 tsp. baking powder
½ cup milk
Juice of one large lemon
½ tsp salt
Rind of 1 lemon
Juice of 1 lemon, ½ cup sugar, for glaze
Cream shortening and sugar; add eggs; mix well. Sift together flour, salt, and baking powder. Add dry mixture to first mixture, alternating with milk. Grate rind of lemon; add; along with juice of one large lemon. mix well. Bake in greased loaf pan for 45 minutes at 350°. Mix juice of 1 large lemon and sugar. Immediately after removing bread from oven, pour lemon mixture over it. Don't remove from pan until cool.
Can be doubled and frozen.
