Peel and cut the potato into chunks
In a pot of boiling water, add the potato chunks and boil until it's fork tender, around 10-15 minutes
For the sauce, add garlic, spring onion, sesame seeds, curry powder and chilli powder to a heat proof bowl then pour hot oil before adding soy sauce, black vinegar, chinese bbq sauce, peanut butter and give it a good mix. Add some hot water to loosen the mixture if needed.
Once the potatoes are cooked, drain and add into a bowl and mash up until there are no lumps (use a potato ricer to make the process easier)
Once smooth, add salt, potato starch and mixture together until a dough is formed
Portion out the dough until you get small equal sized balls
In a pot of boiling water, add in the potato balls and boil for around 4 minutes or until they float to the top
Place them into a bowl of cold water to cool them down
Add the cooked potato dumplings into a bowl and top with the sauce made earlier. Top with coriander and chilli oil.
