Place the gammon in the slow cooker
Cover or nearly cover with your chosen liquid and add aromatics
Slow cook on HIGH for 4-4½ hours or LOW for 7-8 hours
Mix your glaze ingredients together
Remove the gammon, discard the aromatics and netting
Remove the skin, trim the fat to your preference and score a diamond pattern
Cover all over with glaze
Finish in a fan oven at 180°C for 20-30 mins, or an air fryer at 170-180°C for 10-18 mins, basting if needed
Rest for 10+ minutes before carving with a sharp knife
