Chili Oil Noodles
  1. Mince 3 cloves of garlic and half a shallot, keeping them to the side

  2. Chop half a cup of cilantro and add it to a heat safe bowl

  3. Add ½ tbsp chili powder, 1 tbsp sugar, and 1 tsp curry powder to the cilantro

  4. Start cooking your noodles

  5. Heat up ¼ cup of oil in a pan

  6. Add the minced garlic and shallots to the hot oil and cook for about a minute until they brown slightly

  7. Pour the hot oil mixture over the spice mixture and stir well

  8. Strain the cooked noodles and add them to the sauce

  9. Add the juice from 1 lime, 1 tbsp dark soy sauce, and 2 tbsp oyster sauce

  10. Toss everything together and serve
