Preheat oven to 325°F (165°C).
Mix the glaze ingredients together in a small bowl.
Heat olive oil in a large oven-safe pot (like a Dutch oven) over high heat.
Sear the beef roast on all sides until a dark brown crust forms (about 3-4 mins per side).
Pour the glaze mixture over the seared roast.
Cover tightly with a lid or foil and roast in the oven for 3 to 3.5 hours until fork-tender.
Remove the lid/foil, turn the oven to Broil (High), and broil for 3-5 minutes. Watch closely!
Let rest for 10 mins, then slice or shred against the grain.
