Heat a skillet on high and add the corn. Cook until lightly charred and season with salt. Set aside.
Make the dressing by combining all of the dressing ingredients. Season with salt.
Cut up your chicken into manageable pieces
To a large bowl add the corn, chicken, avocado, red onion, coriander, romaine, cheese and corn nuts. Finish with the dressing and toss together! Season with salt.
Serve with extra lime and hot sauce if you like!
