Brown Sugar Candied Bacon
  1. Arrange a rack in the center of the oven and heat the oven to 400°F. Line a rimmed baking sheet with aluminum foil or parchment paper, making sure there is overhang on all 4 sides (overlap a few sheets if needed, this makes cleanup easier). Fit a wire rack onto the baking sheet.

  2. Place ⅓ cup packed light or dark brown sugar and ½ teaspoon black pepper to a large bowl and stir to combine. Add 12 to 16 ounces sliced bacon and toss until the slices are evenly coated in the sugar mixture.

  3. Arrange the bacon on the baking sheet in a single layer, they can be touching but should not overlap. Sprinkle any remaining sugar mixture evenly over the bacon.

  4. Bake, rotating the baking sheet halfway through, until bacon darkens in color, the fat renders out, and white foamy bubbles appear, 18 to 22 minutes total. Let the bacon cool on the rack until the sugar sets slightly, about 5 minutes.
