Grease baking pans, preheat oven 325 F
Sift flour, salt, baking powder, baking soda and cinnamon together
Beat eggs, oil, vanilla, applesauce and sugar together. Add dry to creamed mixture. Stir in shredded zucchini till combined. Pour batter into prepared pans.
Bake for 40 to 60 minutes or till centre comes out clean. Cool I’m pan for 20 minutes and completely cool before cutting into and serving.
