Oi (Cucumber) Kimchi
Start by searing all the short ribs on all sides. Once seared, place them in an oven safe container.
Cook all the vegetables and ginger until they start to get some color. Deglaze with soy sauce, add the beef broth, gochujang, and sugar. Bring it to boil, and add them to the ribs container.
Bake covered at 300f for 1.5 hours, remove the foil or lid and bake uncovered for 1.5 hours. You can check them before to see if they are ready. The tenderness of the meat depends on how long you cook them.
Once they reach your desired tenderness, remove them from the oven, separate the fat. Blend all the liquid with the veggies. Add the meat, and simmer to keep it warm.
Serve with rice and a lot of green onions.
For the cucumbers: Cut the cucumbers, add the salt and mix well. Let them sit for about 15 minutes so they release some liquid. Strain the liquid, add the rest of the ingredients and mix well.
