Cut beef, pat dry, season, sear, set aside.
Cook onions, add celery, carrot, and garlic. If needed add more butter, before adding flour.
Add in flour, stir to combine into chunky paste. Mix in tomato paste, bb bouillion, and worsteshire.
Slowly add broth, then seasoning
Add meat with it's juices. Liquid should cover the beef. Bring to a boil, then simmer on low for 2 hours.
6 Check at the 2 hour mark, if not fall apart tender, cook another hour. this will thicken the sauce too.
Serve over pasta, rice, or mashed potatoes.
