Apricot Cashew Energy Bars
  1. Prepare an 8x8 inch pan by lining it with parchment paper, allowing some overhang on the sides for easy removal.

  2. In a food processor, combine cashews, dried apricots, dried cranberries, shredded coconut, and rolled oats. Pulse until the mixture resembles a coarse meal.

  3. Add honey, tahini, vanilla extract, ground ginger, and ground cinnamon to the food processor. Process continuously until a sticky, uniform dough forms, scraping down the sides as needed.

  4. Transfer the dough into the prepared pan. Press it down firmly and evenly using your hands or the back of a spoon to create a compact layer.

  5. Refrigerate for at least one hour to allow the mixture to firm up. This will make cutting easier.

  6. Once chilled, lift the parchment paper to remove the slab from the pan. Cut into 10 evenly sized bars or squares.

  7. Store the finished bars in an airtight container in the refrigerator for up to a week for optimal freshness.
