Place shallots, garlic, fresh red chillies, dried chillies, lemongrass, candlenuts, turmeric, galangal, dried shrimp, coriander powder, shrimp paste and 100 g water in mixing bowl, blend 10 sec/speed 7. Scrape down sides of mixing bowl with spatula.
Blend 5 sec/speed 7. Scrape down sides of mixing bowl with spatula.
Empty out raw paste when all is smooth
Add 100 ml oil, add fry paste at 100 celcius, 30 minutes or more, speed 1. Until oils separates from paste, it carmelizes and becomes fragrant. Check on it towards the end around 25 minutes.
