Preheat oven to 355°F (180°C)
Zest 1 organic lemon
Peel and core 1.5 lb. (600 g) of apples
Cut the cored apples into slices
Add the sliced apples
Juice of 1 lemon
Toss the sliced apples with lemon juice/zest
½ cup (110g) salted butter
Place the bowl over the simmering water
Allow the butter to melt completely
Remove from heat
2 eggs
½ cup (100 g) granulated sugar
Beat the eggs until light and fluffy
Add the melted butter into the mixture
Mix well to combine
1 ¾ cup (210 g) all-purpose flour
2 teaspoons baking powder
Stir until just combined
Fold in the sliced apples
Pour the batter into a 8-inch (20 cm) cake pan
Lined with parchment paper
Smooth out the batter
Bake at 355°F (180°C) for about 50 minutes
Until golden brown and the batter is cooked through
Let it cool at least 10 - 15 minutes
Dust the cake with powdered sugar before serving
