Easy Italian Apple Cake (torta Di Mele)
  1. Preheat oven to 355°F (180°C)

  2. Zest 1 organic lemon

  3. Peel and core 1.5 lb. (600 g) of apples

  4. Cut the cored apples into slices

  5. Add the sliced apples

  6. Juice of 1 lemon

  7. Toss the sliced apples with lemon juice/zest

  8. ½ cup (110g) salted butter

  9. Place the bowl over the simmering water

  10. Allow the butter to melt completely

  11. Remove from heat

  12. 2 eggs

  13. ½ cup (100 g) granulated sugar

  14. Beat the eggs until light and fluffy

  15. Add the melted butter into the mixture

  16. Mix well to combine

  17. 1 ¾ cup (210 g) all-purpose flour

  18. 2 teaspoons baking powder

  19. Stir until just combined

  20. Fold in the sliced apples

  21. Pour the batter into a 8-inch (20 cm) cake pan

  22. Lined with parchment paper

  23. Smooth out the batter

  24. Bake at 355°F (180°C) for about 50 minutes

  25. Until golden brown and the batter is cooked through

  26. Let it cool at least 10 - 15 minutes

  27. Dust the cake with powdered sugar before serving
