Crack Potatoes
  1. Preheat oven to 400°F and grease a 9×13-inch baking dish.

  2. Chop potatoes into 1-inch chunks.

  3. In a mixing bowl, combine cream cheese, ranch mix, sour cream, and melted butter until smooth.

  4. Add potatoes to the bowl and mix to coat.

  5. Fold in cheddar cheese, most of the bacon bits, and half the green onions.

  6. Transfer mixture to baking dish and spread evenly.

  7. Top with remaining bacon and more cheddar if desired.

  8. Cover with foil and bake 40–45 minutes until potatoes are tender.

  9. Uncover and bake 10–15 more minutes until bubbly and golden.

  10. Let cool for 5 minutes, garnish with green onions, and serve.
