Mix together 3 lbs ground beef, 2 minced onions, 1 minced red bell pepper, 6 garlic cloves, ¼ cup parsley, 1 tbsp cumin, 2 tbsp paprika, 2 tbsp coriander, 1 tbsp garlic powder, 2 tsp black pepper, and 1-1.5 tbsp kosher salt
Spread the meat mixture on 10 square-cut x-large tortillas
Stack 5 tortillas at a time with a tortilla on top and bottom to create 2 stacks
Cut 1 inch wide strips from the stacks
Turn strips on their side and press onto skewers
Cut between skewers to separate
Grill in oiled cast iron for a few minutes per side, turning 4 times total
For the sauce, simmer 8 oz butter, ½ cup yogurt or labneh, ½ minced onion, ¼ cup parsley, 4 garlic cloves, 2 tsp paprika, and salt
Dip or drizzle kebabs with sauce and serve
