saute onion, celery, and carrots in hot oil in a large Dutch oven or stockpot over medium heat for 5 min until tender.
Add garlic and saute 1 min
Add broth and rest of ingredients. Bring to boil, stirring often.
Reduce heat to medium, simmer , stirring occasionally for 20-39 min until veggies are tender. Serve with desired toppings
