  1. For the Aji Amarillo sauce:

  2. Mix all the ingredients together and store in a container for later.

  3. For the tuna tataki:

  4. Prepare the tuna fillet into a 3 cm x 3 cm log.

  5. Sear it on a hot pan to colour the sides.

  6. Let it rest to cool down and slice finely.

  7. Layer on a plate, dress with the Aji Amarillo sauce.
