Greek Zucchini Balls
  1. Combine the flour, baking powder and salt in a small bowl. Set aside.

  2. In a large bowl, combine the zucchini, eggs, feta cheese, grated onion, scallions, mint, parsley, salt and pepper. Stir well.

  3. Add the flour mixture and stir well to combine.

  4. Heat some oil over medium heat (a neutral oil works best… I used vegetable oil) in a skillet about ½" up the sides of the pan.

  5. Once the oil is hot, drop the batter into the hot oil being careful not to crowd the pan. Fry them in batches about 2 minutes on each side. Fritters should be golden brown.

  6. Remove to a dish lined with paper towels and sprinkle with course salt.

  7. Serve with tzatziki
