Cook any noodles of choice; drain and reserve the starchy cooking water.
Immediately toss the noodles with a splash of sesame oil to prevent it from clumping and set aside.
In a heat proof bowl, mix together garlic, ginger, gochugaru, scallions, and sesame seeds.
Pour hot sesame oil on top and let it sizzle. Give it a mix.
Stir in soy sauce, rice vinegar or lime juice, sesame paste or tahini, peanut butter, hot sauce/chilli oil (optional), and black tea (optional).
Add a splash of the starchy noodle water and a dash of brown sugar/honey (optional) and mix until the sauce comes together with a smooth consistency.
Pour the sauce over the noodles and serve it cold, garnished with sliced cucumbers, scallions, and/or sesame seeds.
