Blueberry bars for baby

250g blueberries

1 tbsp water

2 tsp milled chia seeds

2 bananas

½ cup peanut butter

½ cup oats

½ cup self raising flour

2 tbsp melted coconut oil or butter

(you can add 1 tbsp maple syrup but I usually leave it out)

Preheat oven to 180ºC/350ºF.

Add blueberries and water to a pan and cook until they soften. Remove from the heat then stir in the chia seeds and leave aside.

In a bowl, mash the bananas, then stir in the remaining ingredients until it forms a smooth batter. Add ¾ of the mixture to a loaf tin lined with parchment paper. Top with the blueberry chia jam, then dollop on the remaining batter. I also added a sprinkle of extra oats. Bake for 25 minutes until golden brown.

Cool fully (obviously from the reel I did not wait)…but when you wait they fully set and are so much easier to cut. For babies cut into smaller squares. Store in the fridge until ready to eat.
