Blueberry Bars
  1. Start by pre-heating your oven to 180c/350f. Also grease and line an a square cake tin. I used a 7 inch tin, an 8 inch one works too, they'll just be a little thinner.

  2. In a bowl add the softened butter, both sugars and the vanilla. Beat these for about 2 minutes, then mix in the flour. It might seem like there's too much flour at first, but keep mixing, a dough will eventually form.

  3. Once a dough forms, get around 100g of it and put this aside. Put the rest of the dough into your cake tin and flatten it out.

  4. Add the blueberry jam on top of this and spread it out.

  5. With the 100g of dough you left aside, crumble it over the top of the blueberry layer.

  6. Bake this for around 40 minutes. Once it's baked let it cool for at least 30 minutes, then cut into it and enjoy.
