Delicious Diabetic Birthday Cake Recipe
  1. Mix the milk and vinegar and let it sit for 10 minutes (it will turn into buttermilk).

  2. After 10 minutes, mix well with a spoon.

  3. Preheat oven to 350 degrees Fahrenheit.

  4. Spray the inside of a 6" cake pan with nonstick spray.

  5. Add a little flour inside the pan and round it alongside the whole surface. Discard the excess flour.

  6. In a bowl, mix the flour, sugar blend, baking soda, baking powder and salt.

  7. In another bowl, mix the egg until foamy, add the butter and mix until creamy.

  8. Alternate adding the buttermilk and dry mixture into 2-3 batches, starting and finishing with the dry ingredients. Mix well between each addition.

  9. Lastly, add the vanilla and mix.

  10. Pour the cake batter in the prepared pan.

  11. Bake for 30-40 minutes or until a toothpick inserted in the middle comes out clean.

  12. Remove from the oven and let it rest for 20 minutes on a rack.

  13. Unmold and let it cool completely before frosting.

  14. When cake is completely cooled, slice it in the middle to create 2 layers.

  15. In a bowl, mix everything together using an electric mixer for the frosting.

  16. If frosting seems too stiff, add some more milk until creamy.

  17. Place frosting in between the layers of the cake.

  18. Cover with the second layer.

  19. Frosting the top and sides of the cake.
