Postpartum Chili Prep
  1. Cook the beef in a large dutch oven with some ghee, tallow, or oil, over medium-high until all sides are browned. Season with salt and pepper. Remove and set aside.

  2. Add the onions, garlic, and peppers and sauté, scraping up the bottom browned bits, until softened.

  3. Add in the mushrooms and cook until softened.

  4. Add in the fire roasted tomatoes, blended chilis, and 2 cups of water. Once again scrape the bottom to get all those browned bits.

  5. Add in the beef, beans, and let simmer on low for at least 1 hour, but ideally 2.

  6. Add the lime juice and maple syrup or honey.

  7. Taste for seasoning, add extra water if it boiled down too much for your liking.

  8. Top with cheddar cheese, yogurt, cilantro, and more lime juice.
