To prepare the fruits: core and chop the apple into small pieces. Zest and juice the orange, so you have at least 60ml of juice.
To make the mincemeat: add all of the ingredients including the apple, orange zest and juice to a medium saucepan and bring to a bubble. Allow to cook for 15 minutes, with a lid on, over a medium-high heat, stirring often, until juicy and sticky.
To cool and store: remove from the heat and allow to cool in a bowl. Once cool, store in an airtight container for 1-2 weeks in the fridge.
