Preheat air fryer to 400°F.
In one bowl mix: eggs, Greek yogurt
In another bowl mix: flour, parmesan, panko, garlic powder, onion powder, paprika, salt, pepper
Dip cauliflower into wet mixture first, then press HARD into breadcrumb mixture until fully coated.
Place into air fryer basket in a single layer. Spray generously with avocado oil.
Air fry at 400°F for 14–18 minutes, flipping halfway and spraying again until deeply golden and crispy.
Let them sit 2–3 minutes before eating so the coating tightens up like fried food.
Serve with the creamy dipping sauce.
