Mix 2 tablespoons of flax seeds with 6 tablespoons of water and let sit for at least 5 minutes to create flax egg
In a large bowl, mix together Greek yogurt, brown sugar, milk, vanilla, and flax egg
In a separate bowl, whisk together flour, cinnamon, pumpkin pie spice, salt, baking soda, and baking powder, then stir in dry TVP
Add dry ingredients slowly to wet ingredients and combine
Fold in peeled and diced apple chunks
Evenly distribute batter across 12 lined muffin cups
Bake for 12-15 minutes until slightly gooey, then let sit for 15-30 minutes to set
