Lemon Cottage Cheese Pancakes With Blueberry Compote
  1. Mix together pancake mix, egg, egg whites, whipped cottage cheese, vanilla extract, baking soda, lemon juice, and lemon zest until combined

  2. Add optional sweetener if desired

  3. Pour mixture onto a hot pan and cook until ready to flip

  4. Flip pancakes and cook until done

  5. For blueberry compote: microwave ⅓ cup frozen blueberries with a squeeze of lemon juice and 1 tsp honey for 1-2 minutes

  6. Top pancakes with vanilla yogurt and blueberry compote
