Baked Crispy Chicken Tacos

Can make 12 tacos

  1. Sauté onion until fragrant.

  2. Add green chiles, sauté a couple minutes.

  3. Add chicken, enchilada sauce, chicken taco seasoning, ½ lime juice, and cilantro. Let simmer for a few minutes, then set aside.

  4. Fry corn tortillas in oil on each side for 10 seconds (otherwise the tortillas will crack when you fold them shut).

  5. Spray sheet pan with oil spray. Add cheese and chicken filling to the top half of a tortilla, and gently fold in half to not break the tortilla. Repeat with as many tacos as you’d like.

  6. Bake tacos at 400 degrees F for 12 minutes.

  7. While tacos bake, make the sauce.

  8. Top with lettuce and other toppings of your preference!
